Tasting Notes: Savory white peaches, lemon peel, flint and salted crackers are just a few of the opening aromatics of this beautiful white. VINEYARD: 100% Estate – Willow Creek District, Paso Robles

FERMENTATION: Foot stomped during seven-day cold soak then feral co-fermented with daily delestages early on, later moving to lighter extraction. Two week total maceration. Fermented with 30% whole clusters.

COOPERAGE & ELEVAGE: Aged for 15 months in six 500L puncheons and two 225L barriques. 100% neutral French oak. Bottled unfiltered.

Tasting Notes: This suspenseful wine opens with an incredible perfume of honey, white flowers and pie cherries. But then the palate turns darker, offering seductive flavors of truffles, white pepper, cinnamon, incense and forest floor. The silky tannins melt away on the finish as the menagerie of flavors persists for nearly a minute.

FERMENTATION: Once daily delestages with dry ice during five-day cold soak, then feral fermented with twice daily delestages. Three week total maceration. 
95% whole clusters.

COOPERAGE & ELEVAGE: Aged for 22 months in French oak 500L puncheons, 225L barriques, and 320L cigars. 50% new. Bottled unfiltered.

Tasting Notes: A deeply pitched nose of black licorice, plums, dark cherry and hoisin penetrates the olfactory system. The palate staining avors of cassis, beef broth, and violets exhibit power and nesse. Yet, this wine is all about the texture – producing layers of tannins that alternate between sweet and drying, begging you to come back for more.

Tasting Notes: A bouquet of rose petals, raspberries, clove and Fourth of July sparklers explodes from the glass. Flavors of grilled fruits, anise and five spice evolve into a seamlessly smooth mid-palate. These flavors are carried into an impressive
finish with juicy acidity and fine tannins. This wine will reward those willing to wait a few years, but it’s hard to resist right now.

FERMENTATION: Delestages with dry ice during five-day cold soak, then feral fermented with delestages and punch downs. Two week total maceration. 60% whole clusters.

COOPERAGE & ELEVAGE: Aged for 20 months in 225L French oak barriques, 25% new and 20% once and twice used. Bottled unfiltered.

Tasting Notes: Violets, white pepper, charred ribeye and sandalwood harmonize on the nose. A brooding palate of porcini, blackberries and muddled mint evolves into mounting chalky tannins that give this beastly wine a mouth coating richness. Hold on to this wine for a year or pair with your favorite grilled steak if you just can’t wait.
