New Releases
2019 was the coolest harvest we’ve seen since 2011. The extra hangtime allowed flavors to develop spice and savory elements as well as the typical Paso Robles fruity notes. The vintage offers wines with rich, round tannins and moderate acidities, which make for great early drinking wines, as well as moderate term ageability (5-10 years for the reds). I find our 2019 wines complex aromatically, and while you can lay them down for 5-10 years, they are drinking great right now! — Anthony Yount (Winemaker)

2019 Viognier
White peaches, lemon curd, flint and honeysuckle

White peaches, lemon curd, flint and honeysuckle pop out of the glass on the 2019 Viognier. Crisp flavors of orange marmalade, Persian limes, apricot and just a hint of vanilla dance on the palate. It has a wonderfully succulent texture that evolves to a precise citrus-driven finish.

Blend: 100% Viognier
Vineyard: 100% Estate – Willow Creek District Paso Robles.
Fermentation: Whole-cluster pressed into settling tank for 24 hours of clarification, then racked to barrels for long, slow, native ferment. Malolactic fermentation complete.
Cooperage and Elevage: Aged for 15 months in 320l french oak cigar-shaped barrels. 63% new.
Alc: 14.2% pH: 3.52 TA: 5.6 g/l
Bottling Date: 12/10/20. Bottled unfined and unfiltered.

2019 Cirrus

The 2019 Cirrus is pure magic, opening up with a bouquet of white flowers, pie cherries, honey, white pepper and incense. Seductive flavors of grenadine, black truffle, cinnamon and raspberry evolve into a suspenseful palate that carries a surprising viscosity and incredibly persistent finish.

Blend: 84% Grenache, 9% Mourvèdre, 7% Cinsaut
Vineyard: 100% Estate – Willow Creek District Paso Robles.
Fermentation: 7-day cold soak with twice daily pump-overs. 10-day native fermentation with a mix of delestages and pump-overs for cap management. 17-day total maceration. Fermented 50% whole cluster.
Cooperage and Elevage: Aged for 20 months in 75% concrete tank and 25% used 500l and 320l barrels.

2019 Dirt Worshipper

Inky and powerful, the 2019 Dirt Worshipper boasts a nose filled with crushed blackberries, violets, smoked brisket and green pepper. On the midpalate, Intense flavors of olive tapenade, Sassafras, blueberries, menthol and espresso intermingle. The finish starts dense but lightens up with elegant tannins that melt into a long driving vein of salinity.

Blend: 98% Syrah, 2% Roussanne
Vineyard: 44% Denner Vineyard, 16% Bassetti Vineyard, 15% Duvarita Vineyard, 8% Slide Hill Vineyard 7%, Stolo Vineyard, 5% Bassi Vineyard, 5% Spanish Springs Vineyard
Fermentation: 6-day cold soak with twice daily pump-overs. 12-day native fermentation with a mix of delestages and pump-overs for cap management. 18-day total maceration. Fermented 35% whole cluster.
Cooperage and Elevage: Aged for 20 months in 25% new French oak, 75% used 225L barrels.

2019 Sacred Burro

2019 Cabernet Sauvignon
black currant, cedar, cinnamon and blueberry

The 2019 Cabernet Sauvignon opens with brooding notes of black currant, cedar, dried flowers and rolling tobacco. Licorice, mocha, cinnamon and blueberry flavors strut across the palate – they are trailed by hints of hoisin and grilled herbs. The finish starts with concentrated tannins, then transforms into a seamless combination of unctuous midpalate and lingering acidity. 

Blend: 90% Cabernet Sauvignon, 10% Petit Verdot
Vineyard: 100% Estate – Willow Creek District Paso Robles.
Fermentation: 5-day cold soak with twice daily pump-overs. 10-day native fermentation with a mix of delestages and pump-overs for cap management. 15-day total maceration. Fermented 100% destemmed.
Cooperage and Elevage: Aged for 23 months in 225l french oak barriques: 80% new, 20% used.
