Great wines are made in the vineyard, but they’re also made by people. As I begin my 15th harvest working with fruit from this vineyard, and Aron his 17th year farming it, we know that mother nature will bring us plenty of challenges. 2018 Dirt Worshipper
This viscerally thrilling wine explodes with aromas of olive tapenade, white pepper, violets, blackberry, and smoked paprika.

Details

Intensely mysterious flavors of açai berry, seared meats, walnuts and pomegranate lead you to believe that the wine will be rustic and backwards, but the palate is suspenseful, with a refined and linear texture that evolves to a round, supple and incredibly long finish. This vintage of Dirt Worshipper is a tour de force for us at Denner, we couldn’t be prouder to share it with you.

Blend: 98% Syrah, 1% Viognier, 1% Roussanne
Vineyard: 36% Bassetti Vineyard, 30% Denner Vineyard, 20% Duvarita Vineyard, 7% Stolo Vineyard, 7% Slide Hill Vineyard
Fermentation: 6-day cold soak with twice daily pump-overs. 12-day native fermentation with a mix of delestages and pump-overs for cap management. 18-day total maceration. Fermented 45% whole cluster.
Cooperage and Elevage: Aged for 21 months in 15% new French oak, 7% new Hungarian oak, and 78% used 225L barrels
Alc: 14.3% pH: 3.82 TA: 5.7 g/l
Bottling Date: 6/22/20. Bottled unfined and unfiltered.

2018 Viognier
Brightly pitched aromas of white peach, orange peel, flint and yellow rose make a bold introduction to this complex white wine.

Details

Flavors of Casaba melon, kaffir lime, and shortbread intermingle on the rich and creamy mid-palate. Bright acidity quickly balances the intensity of the flavors, providing a zippy, long, and refreshing finish.

Blend: 100% Viognier
Vineyard: 100% Estate – Willow Creek District Paso Robles.
Fermentation: Whole cluster pressed into settling tank for 24 hours of clarification, then racked to barrels for long, slow, native ferment. Malolactic fermentation complete.
Cooperage and Elevage: Aged for 15 months in 320L French oak Cigar-shaped barrels. 56% new.
Alc: 14.2% pH: 3.32 TA: 6.3 g/l
Bottling Date: 12/18/19. Bottled unfined and unfiltered.

2018 Grenache
Ripe red raspberry, grenadine, chimichurri, and fennel pollen are just a few of the intoxicating aromas that introduce this stunning Grenache.

The palate is packed with flavors of Bing cherry, cracked black pepper, citrus zest and just a hint of botanicals. The chalky, yet creamy mid-palate is brightened with sappy acidity that provides a breathtakingly long finish.


Blend: 83% Grenache, 12% Syrah, 5% Counoise
Vineyard: 100% Estate – Willow Creek District Paso Robles.
Fermentation: 7-day cold soak with twice daily pump-overs. 10-day native fermentation with a mix of delestages and pump-overs for cap management. 17-day total maceration. Fermented 25% whole cluster.
Cooperage and Elevage: Aged for 20 months in 75% concrete tank and 25% used 500L and 320L barrels.
Alc: 14.8% pH: 3.66 TA: 5.4 g/l

2018 Cabernet Sauvignon
Nearly opaque in the glass this wine offers classy aromas of cassis, iris, leather, graphite, and dust resting on a wood floor.

Details

Rich flavors of blueberry, mocha, mint, and cardamom evolve into round, yet slightly grainy tannins. The epic palate offers layers of cocoa and earthy notes on the long luxurious finish. This is a great wine to enjoy now with a meal or lay down for the next decade.

Blend: 96% Cabernet Sauvignon, 4% Petit Verdot
Vineyard: 100% Estate – Willow Creek District Paso Robles.
Fermentation: 5-day cold soak with twice daily pump-overs. 10-day native fermentation with a mix of delestages and pump-overs for cap management. 15-day total maceration. Fermented 100% Destemmed.
Cooperage and Elevage: Aged for 23 months in 225L French oak barriques: 82% new, 18% used.

Dense and motley flavors of muddled strawberries, seared ribeye, cranberry and chocolate torte intermingle on the palate. Fantastic richness on the midpalate evolves into a finish that is vibrant and fresh - lending incredible complexity and intrigue to this dynamic wine.

Blend: 86% Carignan, 7% Cabernet, 7% Grenache
Vineyard: 100% Estate – Willow Creek District Paso Robles.
Fermentation: 6-day cold soak with twice daily pump-overs. 14-day native fermentation with a mix of delestages and pump-overs for cap management. 20-day total maceration. Fermented 40% whole cluster.
Cooperage and Elevage: Aged for 22 months in 50% 500L and 600L barrels and 50% in 225L barrels. 18% new French oak.
