Complex and mysterious aromas of black licorice, ripe strawberry, botanicals and Chinese five spice explode from the glass. A core of dense red fruit flavors, chocolate truffle, and guanciale mingle on the impressive palate. The finish is beautifully rich and textured while still surprisingly light on its feet. Vinous: 95
Aged for 16 months in neutral 500L and 600L oak puncheons.
Foot stomped during 5-day cold soak then feral fermented with twice daily delestages. 3 week total maceration. 45% whole cluster. Unfiltered.
