60% Cabernet, 25% Petit Verdot, 15% Merlot
The incredibly inky 2015 Mother of Exiles possesses a powerful nose of strawberries, fresh bay, blueberry, shisha and jasmine. The palate is an exotic mix of browned butter, black currant, cedar and fig. The finish is soft and plush, with floral and flake salt notes lingering for a good minute.
Aged for 22 months in 77% new and 23% once used 225L French oak barrels.
Daily delestages with dry-ice during seven day cold soak, then wild fermented with twice daily delestages early in ferment. Moving to pump-overs later in ferment. Eighteen day total maceration. Fermented 100% destemmed.
