Rose petal, black pepper, fresh bay leaf, raspberry, and savory herbs introduce this strikingly complex Carignan. An exquisite palate boasts flavors of Bing cherry, black walnut, and just a hint of cardamom. Tasting Notes
100% Carignan from vines planted in 2008 directly behind the winery. The nose is a bouquet of light florals and mulberry fruit. With a little breathing time, a rich aroma of damp earth after a first rain emerges. On the palate, there are flavors of currant, dark chocolate, and aged chorizo. The texture is velvety and dense with great length and freshness coming through on the finish.



2014

Vineyard: 100% Estate – Willow Creek District, Paso Robles 

Fermentation: Fermented 50% whole cluster.

Cooperage & Elevage: Aged for 18 months in 500L puncheons, 50% new French oak. 230 cases produced.

Tasting Notes
This powerhouse Carignan sports an inky purple color and delivers high pitched aromas of blackberries, violets, new leather, and dried earth.  The palate is mouth-coating with black cherries, plums, and allspice.  The juicy acidity provides a persistent finish that echoes the wine’s fruity and savory flavors.

Tasting Notes
I was more than a little surprised at how much everyone loved this wine last year.  Some of my anxiety was due to it being a new grape for us, but there was also a little fear in realizing that the inaugural 2012 version just wasn’t as good as the 2013 we had resting in barrel.  Now that you get to try the 2013 I couldn’t be more excited.

Like last year’s Sacred Burro, this is 100% Carignan from vines we planted in 2008 directly behind the winery.  This was some of the last fruit we picked off the estate and once in the winery, we fermented it 50% whole cluster.  After 3 weeks of maceration, we pressed it into half new and half used 500-liter French oak barrels where it rested for 14 months prior to bottling.

The nose is dominated by fresh rose petals, strawberry preserves, and fig compote. An earthy forest floor component drives through as you give it time to breathe.  On the palate, there are flavors of ripe plums, chocolate ganache, and dry cured chorizo.  The texture is velvety and dense with great length and freshness coming through on the finish.


2012

Cooperage & Elevage: Aged for 22 months in once used 500-liter Puncheons.

Tasting Notes
A crowd of sepia-toned canvases shade local merchants from the Catalan sun. A woman with soft brown skin peddles plums, ripe strawberries, and wild herbs. You can almost smell the flowers on her stone rosary as it cascades down her fine linens. Hints of Shisha billow from a nearby store front, only making her seem more natural and exotic.
