This light salmon colored rosé offers a nose packed with honeydew melon, yellow peach and wet granite. Hints of dried sage, wildflowers and cinnamon come through with more air. The palate is juicy and fresh as flavors of wild strawberry and rose water flow seamlessly to the medium bodied, yet precise finish.

Fermentation: Fermented and aged for 5 months in 50% concrete, 50% stainless steel. 80% press, 20% saignée.

Tasting Notes
This melon colored rosé offers a complex and deeply perfumed bouquet of white peony, peach blossom and wild strawberries with hints of citrus, sea mist, and botanicals. It is penetrating and precise on the palate with notes of stone fruit, orange peel, and honeycomb. The juicy and concentrated mid-palate is quickly cut with mouthwatering acidity that precedes an impressively long finish.

Cooperage & Elevage: Aged for 6 months in 70% stainless steel and 30% concrete.

On the nose, it shows ruby red grapefruit, botanicals, and juicy pineapple. The palate has wild strawberry, peach, and dried herbs. A fine silky mid-palate evolves to a finish filled with balanced acid and great tension.
