Notes of spiced damson plums, sugared strawberries, and prosciutto greet your nose right from the start.  Underpinnings of Hibiscus flower, earl grey, and forest floor chime in to support this wine’s earthy nature.  Crunchy red fruits and peppery spice frame the palate where the tannins are balanced by a silky texture.

Cooperage & Elevage: Aged for 6 months in used 500L and 600L barrels, and then an additional 14 months in concrete tank. 

Fermentation: 5-day cold soak with twice daily pump-overs.  10-day maceration with a mix of delestages and pump-overs for cap management.  Fermented with 37% whole clusters.
