2022 Sacred Burro
Tasting Notes: Enticing aromas of blackberry, lavender, Sichuan peppercorn and tamarind merge on the seductive nose. The lively palate opens with cherry, orange zest, and an explosion of umami flavors – notably porcini and nori. The midpalate starts robust with a supple texture that is quickly focused with a core of fruit flavors and precise acidity.

Blend: 82% Carignan, 11% Syrah, 7% Cabernet Sauvignon
Vineyard: 94% Estate – 6% Central Coast.
Fermentation: 3-day cold soak with twice daily pump-overs. 14-day native fermentation with a mix of delestages and pump-overs for cap management. 17-day total maceration. Fermented 23% whole cluster.
Cooperage and Elevage: Aged for 18 months in 225L and 500L barrels. 23% new French oak.
