70% Carignan, 12% Grenache, 10% Tempranillo, 5% Graciano, 3% Petit Verdot

Tasting Notes: Intriguing aromas of cacao nibs, leather, blackberry syrup and California sage merge into this unique elixir. Forest floor and a dash of porcini powder push this wine to the savory side and play nicely with the chewy tannins.  Black cherry and cedar linger on the dusty finish. This versatile red will go with backyard BBQ (burgers, brats, steak, etc.), pizza, or roast duck.

Alcohol: 13.8% 

Cooperage and Elevage: Aged for 19 months in 225L and 500L barrels: 31% new French and Hungarian oak. 

Fermentation: 3-day cold soak with twice daily pump-overs. 14-day native fermentation with a mix of delestages and pump-overs for cap management. 17-day total maceration. Fermented 27% whole cluster.
