55% Cinsault, 29% Clairette Blanche, 14% Mourvèdre, 2% Counoise

Aromas of watermelon, white peach, vanilla bean, creme fraiche, and a hint sea spray and oyster shells envelop the senses. A creamy mid palate with blood orange, honeysuckle, ripe cantaloupe rind, and watermelon granita leaves your palate with a precise finish and fantastic length, calling you back for another sip.

Cooperage & Elevation: Aged 4 months in a combination of concrete, amphora, and stainless-steel drums

Fermentation: Gently whole cluster pressed, one day settling before racking into a mix of small concrete and amphora tanks and stainless-steel drums.  Fermentation occurred over a 3-week period and left on lees until racking/blending for bottling.
