Cooperage and Elevage: Aged for 19 months in 225L and 500L barrels: 39% new French and Hungarian oak

Fermentation: 3-day cold soak with three daily pump-overs. 14-day fermentation with a mix of delestages and pump-overs for cap management. 17-day total maceration. Fermented 18% whole cluster.
